Finely chopped chicken is marinated with freshly pounded lemongrass and aromatic Thai spices, then carefully molded and skewered onto fragrant lemongrass stalks before being grilled over charcoal. The grilling process seals in the natural juices, while gentle smokiness from the flames enhances the bright aromas of lemongrass and herbs.

Served with classic Thai jaew dipping sauce — a vibrant blend of lime, roasted rice, chili flakes, and fish sauce — the dish offers a balanced profile of savory depth, subtle heat, and aromatic freshness.
